
Out here at Slash-O-Meadery, tucked into the pastureland of Nacogdoches County, we like to keep things simple… and a little legendary.
So what is Mead?
Mead is honey wine.
That’s it. That’s the magic.
It’s made from honey, water, and yeast — and it just so happens to be the oldest fermented drink in the world. Before there were craft breweries and fancy cocktails, there was mead. Vikings drank it. Kings drank it. And now?
You can sip it while watching Longhorns and Highlands graze.
Around here, we like to say:
“It’s the oldest drink in the oldest town in Texas.”

How We Make It at Slash-O-Meadery
We start with Raw Texas Wildflower Honey — the real stuff.
The kind that smells like summer and tastes like sunshine.
Honey + Water
We blend our honey with pure water to create the base.
Yeast
We add yeast, and that’s where the magic starts. The yeast eats the natural sugars in the honey and turns them into alcohol. No shortcuts. No weird stuff.
Real Fruits (and Sometimes Jalapeños 😉)
We use real fruits — blackberries, blueberries, peaches, whatever we’re feeling inspired by — and yes, sometimes a little Texas heat. No artificial syrups. No fake flavors.
Time & Patience
Good mead can’t be rushed. We let it ferment slow and steady. Some batches go longer for a drier finish, some stay a little sweeter — but every batch gets our full attention.
Bottled & Poured with a View
Once it’s ready, we bottle it up and pour it fresh in the tasting room on Saturdays from 2–8.


What Does It Taste Like?
That depends on the batch.
Some are dry and bold.
Some are sweet and smooth.
Some are fruity.
Some might surprise you.

We serve up fresh pizza, cheesy cheese sticks, and plenty of sodas —
because Slash-O isn’t just for the wine crowd. It’s for the whole family.

Grab a slice, pour a glass, and settle in while the sun starts to dip behind the tree line. Around here, dinner comes with a view of grazing cattle and maybe
a little live music floating through the air.

Whether you're competitive or just in it for laughs, we’ve got table games ready to go. Sit down with a pizza, order a flight, and challenge somebody you love (or somebody you think you can beat 😉).

We feature local musicians who know how to set the mood — from easy acoustic sets to toe-tapping country and everything in between.
The music floats across the fields, mixes with laughter at the tables, and turns an ordinary evening into something you’ll want to come back for.

Yes… you can meet the cows.
Our Highland cattle aren’t just part of the scenery — they’re part of the experience. You can walk up, say hello, snap a photo, and even feed them while you’re here.
There’s something peaceful about standing out in the pasture with a fuzzy Highland looking back at you while you’re holding a glass of mead.
It slows you down in the best way.
And let’s be honest — they’re basically celebrities around here.

From Our Heart to Yours
Hi, we’re Chris and Lisa Oldmixon.
After 42 years at sea, Chris was ready to drop anchor somewhere that felt steady, honest, and rooted in hard work. When he found this land in Nacogdoches County — with longhorns roaming wide and sunsets stretching across the pasture — it felt like the right place to begin again.
Slash-O-Meadery was born from quiet evenings spent watching the cattle graze and experimenting with small batches of mead at the kitchen table. What started as a shared love for brewing slowly turned into a dream: a place where people could gather, slow down, and
enjoy something made the right way.
Today, the longhorns still roam the land. On Saturday evenings, the music plays, pizza comes out hot, glasses are poured, and
friends pull up chairs around the tables.
We’re just hardworking folks who wanted to share a little piece of our downtime with our community — good mead, open skies, and
a place to sit awhile.
